Ingredients

  • 1/2 cup canned corn (or can use frozen)

  • 1/2 cup diced bell pepper

  • 1/2 cup canned black beans (rinsed)

  • *1/2 cup cooked white rice (or can use brown rice)

  • 1/3 cup pico de gallo

  • handful of chopped lettuce

  • 1/2 diced red mango

  • Topping/Sauce:
  • Use oil free humus. See Spicy Jalapeno Humus recipe

  • Lime juice (optional)

  • Habanero hot sauce (optional)

Directions

  • Dice up all your ingredients. Create your Burrito bowl as a last minute meal idea anytime of the day. Feel free to switch out any veggies with your whatever you have on hand.

Notes

  • This recipe requires bit of meal prep by having cooked rice and oil free humus in advance.
