1/2 cup canned corn (or can use frozen)
1/2 cup diced bell pepper
1/2 cup canned black beans (rinsed)
*1/2 cup cooked white rice (or can use brown rice)
1/3 cup pico de gallo
handful of chopped lettuce
1/2 diced red mango
- Topping/Sauce:
Use oil free humus. See Spicy Jalapeno Humus recipe
Lime juice (optional)
Habanero hot sauce (optional)
Directions
- Dice up all your ingredients. Create your Burrito bowl as a last minute meal idea anytime of the day. Feel free to switch out any veggies with your whatever you have on hand.
Notes
- This recipe requires bit of meal prep by having cooked rice and oil free humus in advance.
