Ingredients

  • 4-5 barbequed corn

  • 1 -2 large medium ripe red mango cut in cubes

  • 1 medium red onion finely chopped

  • 1 red bell pepper finely chopped

  • 1/4 cup chopped cilantro

  • juice of 1 lemon

  • 2-3 green Thai chilies finely chopped (or adjust per your liking)

  • salt per your taste

Directions

  • Remove kernels from the cob one by one. Toss all chopped ingredients together in a bowl. Add juice of 1 lemon, cilantro and salt. Mix and enjoy!

Notes

  • You may also add a cup of cooked or canned black beans to this salad for extra protein.
