Barbeque Corn Salad

4-5 barbequed corn
1 -2 large medium ripe red mango cut in cubes
1 medium red onion finely chopped
1 red bell pepper finely chopped
1/4 cup chopped cilantro
juice of 1 lemon
2-3 green Thai chilies finely chopped (or adjust per your liking)
salt per your taste
Directions
- Remove kernels from the cob one by one. Toss all chopped ingredients together in a bowl. Add juice of 1 lemon, cilantro and salt. Mix and enjoy!
Notes
- You may also add a cup of cooked or canned black beans to this salad for extra protein.
