This Recipe makes 7 servings.

Ingredients

  • 1 cup (115g) almond flour

  • 1/2 cup (100g) unsweetened soy yogurt or use Vegan Greek Yogurt

  • 2/3 cup (90g) cup fresh blueberries

  • *Stevia for sweetness (See notes)

  • *5 -7 Sprays of Avocado oil (Optional, See notes)

Directions

  • Add all ingredients to a large mixing bowl. Mix with a spatula until a soft dough forms.
  • Use an ice cream scooper to portion the dough and shape into mini donuts. Place each donut onto a lined air fryer basket or baking tray.
  • Air fry or bake at 375°F (190°C) for 10 minutes.
  • Let them cool completely before removing from the tray — this helps them firm up!

  • Refrigerate leftovers in an airtight container for up to 5 days.

Notes

  • I used stevia to keep the calories down, but you can swap in any sweetener you like!
  • Feel free to spray with avocado oil to help brown them evenly on top but not necessary. I’ve made them without avocado spray and they turn out just as good!
