Ingredients

  • 1 cup mashed sweet potato

  • 1/2 cup oat flour

  • 1/2 cup mashed canned chickpeas (rinsed & washed)

  • 1/3 cup + 1 tbsp maple syrup

  • 1 tbsp vanilla extract

  • 1/3 cup cacao powder

  • 1/4 tsp sea salt

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tbsp arrowroot powder

  • 1/4 cup unsweetened plant milk (I used soy)

  • 1/4 cup vegan chocolate chips

Directions

  • Preheat oven to 350 F. You can either add chick peas to a food processor to pulse or add chick peas and sweet potato in a bowl together to mash. Add rest of the ingredients into the same bowl, mix everything. Pour mixture on to a non-stick baking dish, sprinkle chocolate chips on top. Bake at 350 F for 35-40 minutes. Let it cool and enjoy!

Notes

  • You will not taste chickpeas in these brownies!
