Seitan Hot dogs with Lupini Beans (High Protein)

Ingredients
- Dry Ingredients
200g Vital Wheat gluten flour
30g Nutritional Yeast (can use fortified or non-fortified)
1.5 tsp garlic powder
1 tsp onion powder
1 tsp chili powder (optional)
1/2 tsp salt
- Wet Ingredients
*250g Lupini beans (See notes, I used these)
2 tbsp tomato puree
1/2-1 tsp liquid smoke
1 tsp Vegan Chicken Bouillon (I used this)
*340 ml water (See notes)
Directions
- In a bowl, add all the dry ingredients, mix everything with a whisk. Keep aside.
- Pre-heat oven to 375F. In a high speed blender, toss all the wet ingredients and blend till smooth.
- Pour wet onto dry and incorporate everything nicely. Divide the dough equally in 4 portions and roll each dough into a hot dog shape. Cover it in a parchment paper, close the edges tightly. Repeat the process for each hot dog. Bake in the oven at 375F for 40-45 minutes.

Notes
- I
- **If you’d like more chewy and less soft texture, only add about 210g Lupini beans and reduce water by 30-40ml. This will make the hot dog more denser instead of soft. You can play around with the ratio of Lupini beans to vital wheat gluten flour to get to your desired consistency.
- I used Lupini Beans in this recipe as they are higher in plant based protein. 125g of lupini beans contain: 190 calories, 22g of protein, 14g carbs, 6g fat.
