Overnight Peaches & Cream Oats (GF)

Ingredients
40g (about 1/2 cup) thick rolled oats (I used gluten free)
2 scoop of vanilla protein powder (I used Nuzest, get 15% off using this link- 20g protien, 90 cals)
1 tsp maple syrup or use stevia
1.5-2 ripe fresh peaches
1/4 cup plain soy yogurt (unsweetened or any other)
1/2 cup unsweetened soy milk (or any other milk of your choice)
1/2 cup water
10g (1 tbsp) chia seeds
1 tsp vanilla extract (optional, I didn’t use any)
Fresh finely chopped peaches for top & bottom
Directions
- Finely chop half a peach, add some pieces of chopped peach to the bottom of a mason jar and reserve the rest for top.
- Add oats, chia seeds, protein powder to the jar with peaches and keep aside.
- Toss about half to1 full peach to a blender with milk, water and maple syrup and roughly blend. Pour this mixture to the jar with oats. You may wish to add vanilla extract but its not needed. Mix nicely.
- Add 1/4 cup of yogurt on top and some fresh diced peaches. Close the lid, store in the refrigerator for overnight or 2-3 hours and enjoy!

Notes
- To have peach flavor, its important to blend peaches with water and milk for this recipe.
- These oats taste like dessert. I make them and keep in the fridge at all time and enjoy them as a healthy dessert.
