2 cups red lentils
5 cups hot water
2 medium size red or white onions
1 tsp chili flakes (or adjust per your tolerance)
1/4 tsp turmeric powder
salt per your taste
1-2 green Thai chili (or adjust per your tolerance)
1 tbsp cilantro (optional but recommended)
Directions
- Rinse and wash lentils. Transfer to a pot, add water and let it come to boil on high heat. Once boiled, add salt, turmeric powder and red chili flakes. Reduce heat to medium and let lentils cook till they soften. This will take about 10 minutes. Avoid stirring too much as it will make lentils break.
- While lentils are cooking, chop onions in small chunks, finely chop cilantro, green Thai chilies and keep aside.
- Once lentils are cooked, let it cool for about 5 minutes, then add onions, cilantro and chopped green Thai chili and gently mix.
- Serve with your rice dish with a splash of lime or lemon juice on top and with a side of salad or veggies.
Notes
- This recipe is perfect to make during busy weeknights.
Can I use other lentils in this recipe Keesha??
You can, but just keep in mind, depending on which lentils you use, cooking time may vary! But same recipe tastes great with any other lentils. 🙂
Can I use jalapeño pepper instead of Thai? Also, reading this – the onions are crunchy (not cooked)? Thank you!
Hi, Yes you can use jalapeno but they won’t be as spicy as Thai Chillies. In this recipe, I use raw onions, that’s what gives it a unique flavor 🙂
