This is my favorite guilt free ice-cream to enjoy during summer months. Give this macro friendly low fat ice-cream a try. You will not be disappointed.
Macros: per 100g serving
Calories: 150, Fat: 7.4g, Carbs: 20.9g, Protein: 6.5g

Ingredients

  • *1 can (400 ml) low fat coconut milk

  • 1.5 cup frozen strawberries

  • 2 tbsp vanilla Vegan keto pudding (I purchased it from Amazon)

  • 1 scoop of Vedge Nutrition vanilla ice-cream protein powder (save 10%, Use code: SLIMONPLANTS)

  • 2-2.5 tbsp erythritol as sweetener or use any other sweetener of your choice

  • 1 Pack of Made good soft red velvet cookies (1 pack has 120 cals, purchased from Costco)

  • Toppings
  • Fresh strawberries or add your favorite sprinkles

Directions

  • Toss all ingredients except Red velvet cookies in a high speed blender and blend till smooth. Transfer mixture to Ninja Creami container and freeze overnight or for 24 hours.
  • Next morning, remove Ninja creami container from the freezer and let it sit on counter top for about 20 minutes. Scrape off any excess on top and smooth it out. (Check my YouTube video for full details).
  • Spin on Ninja creami at ice-cream setting. Once done, you’ll probably notice powder like consistency. Spin again at re-spin option. While Ice-cream is spinning dice up red velvet cookies pieces into small chunks and keep aside.
  • After 2nd spin, create a small hole in the middle of the ice-cream by pushing excess to the side, add red velvet cookies. Cover the top with ice-cream and smooth it out. Give it a final spin for the 3rd time using add-on option.
  • Once done serve your ice-cream with your favorite toppings or some sprinkles on top. Freeze the rest to use throughout the week. Enjoy on a hot summer day!

Notes

  • **Low fat coconut milk works the best as it gives it a creamy texture without too much fat. You will not taste coconut milk.
  • **You may have left over mixture that may not fit in one Ninja Creami container, store the remaining mixture in another container to use later.
  • **Please know that If you choose to use sugar or maple syrup in this recipe, it will increase the calorie content.
