Ingredients

  • 1 cup thick rolled oats (I used gluten free)

  • 1/2 cup pumpkin purée

  • 1/2 cup water

  • 1/2 cup unsweetened plant milk (I used soy) or use 1 cup almond milk & skip water

  • 1 tsp baking powder

  • 1 tsp pumpkin spice

  • *1 scoop of vanilla protein powder(optional, I didn’t add any to this batter. You can get 15% off Nuzest or 10% off Vedge Nutrition using my links)

  • Topping:
  • 1/2 cup unsweetened soy yogurt

  • 1 scoop vanilla protein powder (get 15% off Nuzest or 10% off Vedge Nutrition ) using my links

  • 1 tbsp maple syrup

  • 1 red gala apple

  • 1/2 tsp cinnamon

  • 1-2 tbsp water

Directions

  • Toss all the ingredients in a high speed blender and blend till smooth. Heat up a non stick skillet and pour pancake batter. Cook each pancake one by one for about 3 minutes on each side till all the pancakes are done.
  • In a bowl, Mix soy yogurt with protein powder till smooth, keep aside. Dice an apple, add to a pot with some cinnamon and about 1-2 tbsp of water. Cook on a low/medium heat till soft (about 10 minutes). Serve pancakes with soy protein yogurt on top, caramelized apples and some maple syrup. Enjoy!

  • *If you are adding protein powder to pancake batter then make sure to add additional liquid (1/3 -1/2 cup of water or milk).
