This is my go to snack for a movie night/during weekends or whenever your heart desires! This is so filling, healthy, satisfying and delicious! This can totally be a lazy meal if you wish! 🙂
Ingredients
- For Salsa:
1 cup black beans (canned, rinsed/washed)
1 cup red mango (finely chopped)
quarter of an red onion (finely chopped)
1 jalapeno (seeded if you want less heat)
1/4 cup chopped cilantro
1 cup cooked from frozen or canned corn
1 cup diced tomatoes
juice of 1 lime
salt per taste
2-3 oil free corn tortillas (I used GF)
Directions
- To make oil free tortilla chips, cut your corn tortillas in any shape you like, air fry them at 375 F for 3-4 minutes. or bake them for 5-10 minutes but you must watch them carefully as they tend to burn very quickly. They will turn out super crispy and crunchy!
- While tortillas are air frying finely chop up all your ingredients, toss them in a bowl, add lime juice, salt and mix. Enjoy as a snack or a healthy meal.
