Ingredients

  • 1 cup uncooked bulgur

  • 2 cups water

  • 1 finely diced English cucumber

  • 1 cup diced cherry tomatoes

  • 1 cup finely chopped green bell pepper

  • 1/2 cup canned chick peas (rinsed thoroughly)

  • 1 cup finely chopped scallions

  • 1 cup finely chopped parsley

  • Juice of 1.5 – 2 lemons

  • salt and pepper per your taste

Directions

  • Cook bulgur with 2 cups of water on stove top on low-medium heat covered and stirring occasionally. Once cooked, let bulgur cool.
  • Chop up all your ingredients, toss it in a big bowl, add cooled bulgur, lemon juice, salt and pepper. Give it a good stir and serve!

Notes

  • This is a delicious hearty salad.
