1 cup uncooked bulgur
2 cups water
1 finely diced English cucumber
1 cup diced cherry tomatoes
1 cup finely chopped green bell pepper
1/2 cup canned chick peas (rinsed thoroughly)
1 cup finely chopped scallions
1 cup finely chopped parsley
Juice of 1.5 – 2 lemons
salt and pepper per your taste
Directions
- Cook bulgur with 2 cups of water on stove top on low-medium heat covered and stirring occasionally. Once cooked, let bulgur cool.
- Chop up all your ingredients, toss it in a big bowl, add cooled bulgur, lemon juice, salt and pepper. Give it a good stir and serve!
Notes
- This is a delicious hearty salad.
