Sweet Potato Brownies with chickpeas

1 cup mashed sweet potato
1/2 cup oat flour
1/2 cup mashed canned chickpeas (rinsed & washed)
1/3 cup + 1 tbsp maple syrup
1 tbsp vanilla extract
1/3 cup cacao powder
1/4 tsp sea salt
1 tsp baking powder
1 tsp baking soda
1 tbsp arrowroot powder
1/4 cup unsweetened plant milk (I used soy)
1/4 cup vegan chocolate chips
Directions
- Preheat oven to 350 F. You can either add chick peas to a food processor to pulse or add chick peas and sweet potato in a bowl together to mash. Add rest of the ingredients into the same bowl, mix everything. Pour mixture on to a non-stick baking dish, sprinkle chocolate chips on top. Bake at 350 F for 35-40 minutes. Let it cool and enjoy!
Notes
- You will not taste chickpeas in these brownies!
