Ingredients

  • 1 large onion

  • 3-4 medium size zucchini

  • 5 medium size tomatoes

  • 4 cups water

  • *4-5 medium size white potatoes (pre-steamed)

  • 7-8 fresh cloves of garlic (minced)

  • 3-4 Thai green chilies finely chopped (adjust per your spice level)

  • 2 tsp smoked paprika

  • 1/4 tsp turmeric powder

  • 1/4 cup chopped cilantro (optional)

  • salt per your taste

Directions

  • Dice onion and water sauté on low heat till brown. In the meantime, dice tomatoes, zucchini, potatoes, garlic, chilies and keep aside. Once onions are browned, add tomatoes, garlic and chilies and cook till tomatoes soften.
  • Add rest of your spices, sauté for about 2 minutes. Add zucchini and cook for about 5 minutes. Add potatoes and let it cook for another 5-10 minutes. Once cooked, mash some potatoes to thicken your curry. Sprinkle cilantro on top, squeeze of lime juice and serve on top of your rice!

Notes

  • *You’ll cut down on cooking time if you use steamed potatoes. Raw potatoes tend to take long time to soften if there are tomatoes present in the curry.
