Ingredients

  • 1 butternut squash, seeded and chopped in big squares

  • 2 medium size sweet potatoes

  • 1 large onion finely diced

  • 1 tbsp minced garlic

  • 1 tbsp chili flakes (or adjust per your liking)

  • 1/4 cup chopped cilantro for garnish on top (optional)

  • salt per your taste

Directions

  • Chop butternut squash into big square pieces, remove seeds. Toss squash and sweet potatoes in a steamer in an instant pot for 7 minutes, do quick release, remove skin, transfer to a bowl and mash. Keep aside. If you don’t have instant pot, steam them on the stove till butternut squash and sweet potatoes are tender.
  • Sauté onion on low heat till brown. Takes about 10-12 minutes. Keep on adding 1 tbsp of water at a time to deglaze onions. Once onions have browned, add minced garlic, chili flakes, salt and cook for another 1-2 minutes till garlic releases fragrance. Add mashed squash and sweet potatoes mixture and give it a good mix.
  • Sprinkle chopped cilantro on top. Serve it as a side with any dish and enjoy!
