1 can of chick peas rinsed and washed
1 medium red onion finely chopped
1 red bell pepper finely chopped
1 large English cucumber diced in small cubes
7-8 mint leaves finely chopped
1 tsp chili flakes (or adjust per your taste)
Salt per your taste
Lemon juice (optional)
- Dressing:
2-3 tbsp oil free pesto (see my pesto recipe under Sauces/Dressings)
Directions
- Chop all ingredients, toss in a bowl. Combine salt, chili flakes and oil free pesto. Squeeze some more lemon juice on top if you wish. Serve and enjoy!
