Ingredients

  • 1 cup fully packed mint leaves (stems removed)

  • *1/3 cup cilantro (optional but highly recommended)

  • 1 green mango diced

  • 1 small red onion diced

  • 2 tbsp maple syrup (depending on your taste) or use brown sugar

  • 1 Jalapeno (or 2-3 green Thai Chilies) per tolerance

  • 1 tsp grated ginger (optional)

  • salt per your taste

  • *1-2 tbsp water to help with blending

Directions

  • Remove mint leaves from stems, wash, dry and toss in food processor. Add all other ingredients. Blend while still leaving some texture. Give it a taste and adjust.
  • Enjoy it as a dip or with buddha bowls or inside sandwiches. Store it in a jar in the fridge for up to 7 days.
